I waited two hours to get in and felt it was well-worth it. The food was excellent and the hype was worth it. The original Tim Ho Wan in Hong Kong won its Michelin star for the right reasons. Yes, dim sum can be freezed and shipped from China to US. Maybe just a few dishes were mass produced from China like other dim sum places in China town. I think their dim sum mostly made here by hands in the kitchen. THeir known dish is the crunchy hot flavorful, a must have "baked pork bun". It is mainly serves dim sum, and no cart like other traditional dim sum places. Its environment is different from a typical Chinese ones. The restaurant is bright, airy, and clean looking. We arrived right at the door opened in Irvine, no line. My hotel basically facing its place, any time of the day, i always saw a long line wait to buy. When I was in Japan, its small location just sells only the baked pork bun. Tim Ho Wan is a very known dim sum internationally.
